Joe's Pancake House has been serving breakfast and lunch in Tucson for almost four decades.

Joe's Pancakes was one of the many local businesses impacted by the COVID-19 pandemic, where the restaurant had to resort to take-out only.

With a federal loan from the protection program, they were able to re-hire some of their staff.

Manager Mary Brindley said "Everyday has been a learning process. And so I just reassured the staff everyday is going to be different. We're going to learn. And learn how to be better. And we can't just get set in our ways right now."

One of Joe's Pancakes more popular menu items has been their 'quarantine burger,' a quarter pound burger that's topped with barbecue sauce, pulled bacon and pepper jack cheese.
